4 Tbsp unsalted butter
1 lb slab bacon, cut across the grain into eight 1/2-inch thick slices
salt and pepper
2 large yellow onions, thinly sliced lengthwise
1 Tbsp thyme leaves
2 1/2 lbs medium sweet baking apples, cut into 12 wedges each

In a 12-inch skillet, melt the butter over medium-high heat.
Season the bacon with salt and pepper and add half to the skillet.
Cook, turning once, until tender and caramelized on both sides; repeat with the remaining bacon.
Drain off all but 1/4 cup of the rendered fat, add the onions, and cook over medium, stirring occasionally, until the onions are caramelized and soft.
Stir in the thyme, then scrape into a 9x13-inch baking dish.
Stir the apples into the onions and bake for 20 minutes for 20 minutes, until the apples are just tender.
Push the apples and onions to one side of the dish and place the bacon slices beside them.
Bake until the apples are very tender, about 10 minutes more.
Cool for 10 minutes before serving.
