4 large mirlitons (called chayote or Mexican pear squash in some areas)
1 cup Bisquick
1 cup sugar
1 stick butter, melted
2 eggs
1 teaspoon vanilla

Directions:
Peel mirlitons under cool running water and remove seed. Dice and boil until tender and easy to mash. Drain well and return to pot. Mash well with potato masher or ricer. Put mashed mirliton in a clean, lint-free dish towel and twist to squeeze out most liquid. Grease a 9” deep dish pie plate and preheat oven to 350ºF. Mix all ingredients together and place in deep dish pie plate. Bake 50-55 minutes until the pie is golden brown. Serve warm or cold.
