1/3 cup acorn flour
2/3 cup coarse ground grits
4 cups water
kosher salt
butter
maple syrup

⅓ cup cold-leached acorn flour
⅔ cup coarse-ground corn grits like flint corn
4 cups water
Kosher salt to taste
Butter maple syrup

Directions:
Directions:
Whisk together the acorn flour, grits, and water in a saucepan and heat until simmering, whisking constantly.
When the mixture has thickened, transfer to a baking dish.
Bake, covered, for 1 hour in a 250º oven, until tender.
Season to taste with salt and serve, drizzled with maple syrup.
