1 pound alligator meat, finely chopped
1 egg
1 Tbsp minced onion
2 Tbsp diced celery
1 Tbsp chopped fresh parsley
2 Tbsp finely chopped shallots
2 tsp lemon pepper
1/2 tsp salt
1/4 cup bread crumbs
flour
1 cup cooking oil

Directions:
Directions:
Combine the alligator, egg, onion, celery, parsley, shallots, lemon pepper, salt, and bread crumbs in a bowl.
Form into 1-inch meatballs and chill for one hour.
Heat the oil in a large skillet.
Dredge the meatballs in flour, shaking off any excess then fry in the skillet, turning gently, until browned on all sides and cooked through.
Remove and drain on paper towels.
