1 lb baby carrots
8 oz mushrooms
1/4 cup olive oil
1 Tbsp kosher salt
2 Tbsp chopped garlic
2 tsp chopped fresh rosemary
1 tsp pepper

Directions:
Directions:
Combine the oil, salt, garlic, rosemary and black pepper.
Toss the carrots in half of the mixture and the mushrooms in the other half.
Spread the carrots and mushrooms separately over two parchment lined baking sheeets.
Roast at 500º until the carrots have begun to char and the mushrooms are lightly crisped around the edges.
(The carrots will take longer.)
Toss together to serve.
