2 cups blueberry pancake mix
1 cup water
2 1/2 cups powdered sugar
1/3 cup white chocolate chips
3 Tbsp butter, softened
3 Tbsp cream cheese, softened
1/8 tsp salt
1/4 tsp vanilla extract
Directions:
Directions:
Combine the pancake mix, water, 1/2 cup powdered sugar, and the white chocolate chips.
Use a cookie scoop to scoop balls of pancake batter to deep fry in 350º oil until browned.
Remove to drain on paper towels.
For the dipping sauce, cream the butter and cream cheese together until smooth.
Gradually add the remaining powdered sugar, mixing on low speed until fully incorporated.
Add the salt and vanilla, then increase the speed to medium and beat until light and fluffy.
Thin the sauce with a little bit of milk or cream if needed.
