1/2 cup of your favorite beer
3/4 cup ketchup
1/2 cup honey
2 tsp dijon mustard
2 tsp worcestershire sauce
2 tsp chipotle chili powder
1 tsp paprika
1 tsp garlic powder
salt
2 lbs boneless skinless chicken breasts, cut into one inch pieces (easy to cut while frozen)

Optional Corn and Feta Salsa:
1-2 jalapenos, grilled and charred on grill, then roughly chopped
2 cups grilled or steamed corn
1/3 cup fresh cilantro, chopped
1/4 cup fresh basil, chopped
2 tbsp lime juice
1 Tbsp lemon juice
1 Tbsp apple cider vinegar
1/3 cup crumbled feta cheese

mashed avocado, for serving-optional to add for serving on the side

Directions:
Directions:
In a pot, combine the beer, ketchup, honey, dijon, Worcestershire sauce, chili powder, paprika, garlic powder and about 1 tsp salt. Bring sauce to a boil over medium high heat. Reduce the heat to low and simmer 15 minutes, until thickened.
Combine the chicken and about 1/2 cup BBQ sauce in a bowl, tossing to coat.
Thread chicken onto skewers and grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10-12 miutes total. Alternately, you can roast the chicken at 400 degrees for 20-30 minutes.
