8 bacon slices, partially cooked but not crispy
8 large biscuits
2 oz. cheddar cheese shredded (1/2 cup)
8 large eggs
1/4 tsp. salt
1/4 tsp black pepper
Chopped fresh chives

Directions:
Directions:
Preheat oven to 400º.

Cook bacon in a large skillet until; partially done, not crispy, Cut in half and set aside.

Place bicuits out until they are 31/2” round. Using a 2” biscuit cutter, cut a whole in the center of each biscuit and remove dough. Bake 8 minutes in a 400º oven. Remove, but keep oven on.

Separate egg whites and yoke and whisk whites.

Crisscross and press 2 slices of bacon into hole and cover with 1 Tbsp. cheese. Make sure to create a well like opening. Place one egg yoke into well and top with 1 Tbsp. egg white. Sprinkle egg with salt and pepper.

Bake 10 to 12 minutes. Garnish with chives.
