1 large red onion, halved and sliced thin
2 Tbsp white vinegar
4 unripe plantains, peeled
6 Tbsp butter, softened
6 fried eggs

Directions:
Directions:
In small bowl, mix onion and vinegar.
Cover; refrigerate until ready to serve.
Cut the plantains into 8 pieces and place in a 2-quart saucepan; cover with water.
Heat to boiling, then reduce heat to medium and cook for 20 - 25, or until the plantains are tender.
Mas the plantains with butter, adding cooking liquid, until mixture is mashed.
Top about 1 cup mashed plantains with sliced onion and serve with a fried egg.
