Ingredients: 1-1/2 pounds cream cheese at room temperature 1/2 c. fine cake crumbs (leftover pound cake, graham cracker crumbs, or any cake crumbs). zest (grated rind) of 2 lemons zest (grated rind) of 1 orange 1/2 c. heavy cream 1/4 c. half-and-half 3/4 c. plus 2 tbsp. sugar 4 large eggs 2 tbsp. sour cream 1 tsp. vanilla

Directions:Butter an 8-inch springform pan. Sprinkle inside with cake crumbs and shake out excess. Put cream cheese in mixer bowl and add zests and vanilla, mixing well. Gradually add heavy cream and sugar. Mix on medium speed. Do not mix too fast as air will be incorporated into cake. Add eggs, one at a time, mixing well after each. Beat in sour cream and half-and-half. Pour into prepared pan and cover bottom and sides with heavy foil to make waterproof. Set pan in larger pan and pour boiling water around it to about 1-inch depth. place all in preheated oven at 375 degrees. Bake 1-1/4 hours or until center does not quiver when shaken lightly. Remove from oven and let stand on rack for 10 minutes Remove ring from pan bottom and allow to cool. Chill after cheesecake is completely cooled. |
