Pound Cake

¼ pound butter, soft
½ cup solid shortening
2 cups sugar
3 cups plain flour
½ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
3 eggs
1 teaspoon grated lemon rind
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 325ºF.

Cream butter, shortening and sugar. Add the eggs (one at a time); beating well after each.

In a separate bowl, sift flour, soda and salt together.

Add the flour mixture to the cream mixture, beating alternately with the buttermilk. Add the vanilla and lemon rind, mixing well.

Pour batter into a greased tube pan sprinkled with dry flour. Cook for 1 hour and 10 minutes.
 

Glaze for Cake

2 cups confectioner's sugar
½ cup butter, soft
2 teaspoons lemon juice
Grated rind (1 lemon)

Mix ingredients together, blending well. Put some of the glaze on top of the cake while in the pan. Flip the cake out onto a plate and finish frosting it while the cake is hot.
