12 ½" thick slices of beef tenderloin (3 oz each)
2 tbsp butter
6 artichoke hearts / cut in half
6 med tomatoes / cut in half
12 round toasts
Salt, pepper
Sugar
Bearnaise sauce
½ C brandy
Parsley or watercress for garnish

Prepare & set aside Bearnaise sauce
Gently sauté in 1 tbsp butter 12 half pieces artichokes, turn once - set aside to keep warm. Toast dry bread rounds and set aside. Set 12 ½-tomatos in greased pan, season with salt, pepper, sugar - broil 400º 5-10 mins - set aside. Prepare chafing dish (warm pan) - put in butter and let it become blonde (hot enough to sear immediately) and add 6 slices of tenderloin, turn once in 3 mins for med rare. Set aside. Cook other 6 tenderloins. Arrange all on platter. Put fry pan back on heat. When hot, add wine & brandy and ignite. Pour over tournedos. Top with artichokes and (part?) of Bearnaise. Pass balance of Bearnaise.
