1 tsp canola oil
1 lb ground beef
1 tsp taco seasoning
1 lb mini bell peppers, halved and seeded
1 cup shredded cheddar cheese

For the Sauce:
1/2 cup sour cream
1/2 cup fresh cilantro
1 clove garlic
2 Tbsp fresh lime juice

Directions:
Directions:
Cook the ground beef until browned and drain.
Stir in the taco seasoning and cook for 1 - 2 minutes more.
Spoon evenly into the pepper halves and place on a foil lined baking sheet.
Bake for 13 - 15 minutes at 350º, until the peppers have slightly softened.
Top the peppers with the cheese and return to the oven for 2 - 3 minutes.

For the Sauce:
Process in a food processor until smooth and chill until ready to use.
