1 1/2 lbs scallops
1/2 cup white wine
2 Tbs (1/2 stick) butter
2 Tbs olive oil
3 garlic cloves, minced
Juice from 1 lemon
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
1/8 tsp cayenne pepper

Topping
1/2 cup panko breadcrumbs
2 Tbs butter, melted
4 Tbs parmesan cheese
Fresh parsley, finely chopped

Directions:
Directions:
1. Preheat oven to 400º F.

2. Add butter and white wine to an 8x10-inch baking dish. Place in oven for 10 minutes to let sauce reduce.

3. Meanwhile, dry scallops and remove any attached muscle by pinching and tearing it away from the scallop.

4. Add olive oil, garlic, salt pepper, paprika and cayenne pepper to a bowl. Add scallops and toss to coat.

5. In a separate bowl, stir together breadcrumbs, melted butter, and parmesan cheese.

6. Arrange scallops in a single layer in the baking dish and sprinkle with breadcrumb topping. Bake until golden brown; about 15-18 minutes.

7. Sprinkle with parsley and serve.
