1 Liter warm water
1.2 oz olive oil
1 1/2 tsp salt
53 oz, flour (3# 5 oz)
.3 oz honey
5 gm dry yeast

Directions:
Combine yeast, honey and warm water, stir well, and let sit for 3 minutes
Kitchen aid fitted with bread hook should not be used above #2 setting
Combine 3/4 of the flour with yeast mixture, then let sit for one hour.
Combine flour and salt, then add to yeast mixture, with oil.
Mix with dough hook, about 5 minutes or until smooth.
Pour out onto a floured board, drizzle olive oil on top, cover with plastic wrap and towel, then let rest for one hour
Divide dough into four balls
Dust with flour, cover tightly with plastic wrap
Rest 6-8 hours
Stretch dough into desired shapes

After putting sauce (Romano cheese and basil of desired) on pizza bake at 475º for 4 minutes, then add toppings and bake for 6-8 more minutes.

Favorite toppings: prosciutto, katamala olives, sliced tomato, fresh mozzarelle, turkey pepperoni
