4-6 good quality roma tomatoes or another firm juicy tomato
1/2 tsp. good quality Balsamic Vinegar
1-1/2 Tbsp parmesan cheese
6-8 fresh basil leaves
1-2 garlic cloves minced
4 garlic cloves for brushing the top of the toasted bread
French Loaf
Shreded mozzeralla cheese for the top if desired.

Directions:
Directions:
Combine all the ingredients in bowl and allow to sit while preparing the bread.

For the bread you can use a large french loaf, drizzle with olive oil and toast under the broiler.

Then Rub the bread with extra garlic cloves -you will need to change the cloves frequently (or spread thin layer of roasted garlic)

Top with tomato mixture, add a little more paremesan cheese and bake or serve cold.

Just before serving drizzile with Balsamic vinegar
