1 medium sized potato
3 - 3½ cups icing sugar
1-1½ cups shredded coconut
1 tsp. vanilla

Directions:
Directions:
Cook potato in unsalted boiling water until soft. Drain. Mash working in icing sugar then blend in coconut and vanilla. Mixture will look like thick icing. At this point the mixture may be divided and tinted with food coloring. Shape into balls and refrigerate until firm. This candy can also be made into 2 rolls 1" in diameter. When the roll is firm pour 2 squares unsweetened chocolate over them. Chill and slice thinly. These are attractive in red & green.
