Ingredients: Boneless chicken breasts - ~1lb
1/4 cup olive oil
2-4 minced garlic cloves
1/3 cup dry white wine
Salt and fresh ground Pepper
1 Tbsp grated lemon zest (2 lemons)
2 Tbsp freshly squeezed lemon juice (from the same 2 lemons)
1 more lemon - sliced
1 1/2 tsp dried oregano
1 tsp fresh minced thyme (can add or substitute with rosemary)

Directions:Preheat oven to 400
Pound the chicken breasts so they are the same thickness. Pat the chicken dry with a paper towel
In a small saucepan warm olive oil over low heat. Add minced garlic and cook 1 minute, then turn off heat so it doesn't burn
Add white wine, lemon zest, lemon juice, oregano, thyme/rosemary and a little salt to the oil. Can put a few peppercorns in the sauce if you want
Pour mixture into a 9x13 baking dish and then place the chicken in the dish. Brush the chicken with the oil and sprinkle with salt and pepper
Place the lemon slices around the chicken
Bake for ~35 minutes. Then cook under broiler for 2 min. Remove from oven and cover with foil for 10 minutes
Serve with white rice or long noodle pasta and a green veggie. Perhaps crusty bread to mop up the plate |
