1 pg flour frjitas (10+) or fajita shells
10 ea eggs
2 tbls chopped onions
2 tsp chopped green peppers (mild hot to hot)
2 tbls butter
1 tbls cilantro (parsley)
⅓ cup milk
1 cup jack cheese shredded
1 cup mild cheddar cheese shredded
1 cup tomato, chopped

Directions:
Directions:
Bake at 350 degrees

Combine 10 eggs, 1/3 cup milk, cilantro and salt/pepper
Beat until mixture and pour into a frying pan to scramble together until done.

Place equal amounts of eggs into 10 fajita or shells

Add toping of the three (3) shredded cheeses and secure with a toothpick.

Place on lightly greased baking sheet (or line with non-stick aluminum foil) and
Bake for 8 minutes or until cheese is melted and fajita is lightly browned.

Serve with a mild salsa and sliced avocado with lime juice squeezed over top.
This holds overnight or is great warmed up for a lunch..
