2/3 cup melted butter
1 cup white sugar
1/4 cup honey
1 egg
1 tsp vanilla
1 tbsp lavender syrup
2 cups flour
2 tsp baking soda
1/2 tsp salt
2 tbsp lavender buds
coarse grained sugar, for rolling

Preheat oven to 350 degrees.

Beat melted butter, honey and sugar until smooth.

Beat in the egg, vanilla and lavender syrup until well incorporated. Then fold in the flour, baking soda and salt.

The dough will be very soft. Refrigerate for at least 30 minutes and until it has firmed up.

Talke 1-2 tbsp sized pieces of dough and shape into balls. Roll in coarse sugar, then flatten with palm of your hand. Sprinkle with lavender buds, pressing into dough.

Bake on parchment lined baking sheet for 10 minutes or until edges are crispy and light brown in color. Let cool to room temperature before eating.
