1½ c. long grain white rice
1 large onion chopped
½ c. butter
2 T. chopped parsley
1½ c. condensed beef consomme
1 c. water
¾-1 c. shelled pine nuts

Directions:
Directions:
Saute rice and onion in butter until rice is golden. Combine with parsley, consomme and water. Pour into a greased 2 qt. casserole. Cover and bake in 350º oven until rice feels tender between fingers and water is absorbed (about 30 minutes), Uncover immediately Fluff with fork and sprinkle with pine nuts..
