3 large eggs
1 cup shredded cheddar or monterey jack cheese
1 can green chilies
1 lb Italian chicken sausage
2 cups shredded spinach
1/2 cup milk
2-3 green onions (chopped)
1 Tbsp extra virgin olive oil

Directions:
Directions:
Preheat oven to 350º F

Add olive oil to a heat pan. Saute sausage until brown and no longer pink.

Add the spinach and green onions and cook until spinach is wilted. Remove from heat and let cool.

In a large mixing bowl, beat the eggs. Add milk, cheese and green chilies to the eggs.
Add sausage mixture and mix thoroughly.

Lightly grease a 9" pie dish and pour mixture in to it. Cook for @ 50 mins until center is firm. Remove from oven and serve warm.

For this recipe, I am omitting the crust for a more frittata type experience.
If you can't find chicken sausage, any breakfast sausage will do.
Freezes well (up to 3 mths).
