2 garlic cloves, minced
1/4 cup olive oil
1/4 cup honey
2 tsp thyme
1 tsp salt
2 1/2 lbs carrots, halved
1 lemon, seeded and sliced thin

Directions:
Directions:
Whisk together the garlic, oil, honey, thyme, and salt in a small bowl.
Spread the carrots and lemon in a roasting pan or glass dish, then toss with the garlic mixture.
Roast, tossing occasionally, until the carrots are tender and the lemons are caramelized, 35 - 40 minutes.
