1 Tbsp coconut oil
2 bunches rainbow carrots, about 2 lbs, halved lengthwise
juice of 1 large orange
juice of 1 large lemon
1/2 Tbsp maple syrup
1/2 Tbsp apple cider vinegar
1/4 tsp sea salt
chives

Directions:
Directions:
Grease a baking sheet with coconut oil and spread with the carrots.
Combine the orange juice, lemon juice, syrup, vinegar, and salt.
Pour over the carrots and make sure that the carrots are fully coated.
Bake for 30 minutes, turning the carrots a few times.
Serve hot garnished with chopped chives.
