1/2 cup brown uncooked lentils
1 cup diced English cucumber
1/3 cup chopped red pepper
1/3 cup chopped yellow pepper
1/2 cup chopped seeded tomatoes
1/4 cup chopped red onion
1/4 cup chopped cilantro & mint
1/4 cup chopped jalapeņos

For the dressing
2 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
1/4 teaspoon red pepper flakes
1 teaspoon maple syrup (or honey)
1 tablespoon lemon or lime juice
1/4 teaspoon salt
1/8 teaspoon black pepper

Directions:
Directions:
Wash lentils under running tap water.
Place lentils in saucepan with 3 cups cold water and 1/2 teaspoon salt.
Bring to boil and lower heat to simmer.
Simmer for 12-13 minutes until tender but firm.
Strain lentils and leave in strainer until dry.
Chop the vegetables while the lentils are cooking and draining.
Whisk together all of the dressing ingredients.
Mix well lentils, vegetables and dressing.
Store in refrigerator to meld flavors.
