4 medium zucchini
1 tsp creole seasoning
1 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup shredded provolone cheese
1 tsp Italian seasoning
1/2 cup Pepperoni cup and crisp
1/2 cup cooked shrimp
2 Tbsp grated Parmesan cheese

Directions:

Heat oven to 375 degrees. Halve each zucchini lengthwise and scoop out center flesh, seeds, and pulp, leaving a 1/3 inch on sides to make a "boat". Arrange on pan. Sprinkle inside of boats with creole seasoning. Spoon pizza sauce into each shell. Sprinkle with mozzarella, then provolone cheese, and Italian seasoning. Top with shrimp, then pepperoni. Sprinkle with Parmesan. Bake 15-20 minutes or until cheese is hot and bubbly and zucchini is tender. Heat broiler. Broil 2 to 3 additional minutes or until cheese is lightly browned. Remove from oven and cool slightly before serving.
