1 onion, finely chopped
2 cloves of garlic, minced
1 to 2 tablespoons brown sugar
1 to 2 teaspoons lemon juice
½ teaspoon of sambal oelek (more or less according to how hot you like your food)
¾ cup of crunchy peanut butter

Directions:
Crush the chopped onions, minced garlic and sambal oelek with the bottom of a glass on a flat dish then fry mixture in oil. Fry til golden brown. Add peanut butter and enough water so that when you stir, you have a thick sauce. Add more water if the sauce gets too thick, more peanut butter if too thin. Add the lemon juice and brown sugar. Stir thoroughly. Add a bit of salt to taste. (If too salty add a bit more brown sugar.) You will have to experiment a bit with the amounts of the ingredients.
(You can buy the sambal oelek in the grocery store in the international section. It is made by Conimex.)

Again a recipe from Ron's mom. This sauce is great with Nasi Goreng (the Indonesian Fried Rice) or Sate (recipe also in our cook book) or over cooked cabbage or green beans or for any barbecued chicken or meat. We also have this dish in Suriname.
