1 Bag (packed) full polk salad
½ cup vegetable oil
2-3 eggs

Directions:
Directions:
First, wash polk salad in cold water (twice). In a large pan bring 4 quarts of water to a boil, add polk salad, cook until tender for 1½ to 2 hours. Add more water if needed. Drain off water.

Next, in a large frying pan put 1½ cups of oil and polk salad. Cook until all water is gone.

Last, break eggs in a bowl. Beat well with salt and pepper to taste. Pour over polk salad mix and cook until eggs are done. Pour into colander to let extra oil drain.
