2 Cups Graham Cracker Crumbs (14-16 Sheets) (plastic bag with rolling pin)
½ Cup Butter (1 Stick) (melted)
¼ Cup Granulated Sugar

Cookie Dough:

½ Cup Butter (1 Stick) (room temperature)
½ Cup Light Brown Sugar (packed)
½ Cup Granulated Sugar
1½ Tsp. Vanilla Extract
1 Cup All-Purpose Flour
1 Cup Chocolate Chips

Cheesecake Filling:

2 Pkg. Cream Cheese (8 oz. each) (room temperature)
⅓ Cup Granulated Sugar
2 Eggs (room temperature)
1½ Tsp. Vanilla Extract

This recipe involves chilling after completion, so plan accordingly.

Preheat oven to 325ºF. Grease a 9x13 inch baking pan. Set aside.

For the crust, in a medium bowl, thoroughly combine cracker crumbs, butter and sugar. Press into the bottom of prepared pan. Bake for 10 minutes (rotating pan ½ turn at halfway point of baking). Leaving oven on, remove pan to wire rack to cool.

To make cookie dough, in a large bowl, beat butter, sugars and vanilla until smooth (about 1 minute). Slowly mix in flour until just combined. Stir in chips. This mixture will be dry and crumbly; which is fine. Set aside.

For filling, in a large bowl, beat together cream cheese and sugar until smooth. Mix in eggs and vanilla until just combined. Pour evenly onto the prepared crust.

Place teaspoon chunks of dough (slightly flattened out) over top of filling layer. Don't worry if there are some small gaps.

Bake for 30 minutes until the top feels dry, firm and pan looks set if given a gentle shake. Be sure to rotate pan ½ turn at halfway point of baking. Remove from oven and place on wire rack to cool completely.

Once cooled, refrigerate for at least 2-3 hours (if not overnight). Serve. Store in airtight container in refrigerator.
