1/4 cup butter
1/2 cup sugar
3 egg yolks
1 cup flour
1 tsp baking powder
1 tsp cornstarch
1/2 tsp salt
1 tsp vanilla
3 Tbsp milk
Jam (choose your favourite flavour)

Meringue:
3 egg whites
1/2 cup sugar
1/2 cup coconut

Additional coconut to sprinkle on top.
Directions:
Directions:
Cream butter and sugar. Add egg yolks. Add dry ingredients alternating with milk. Add vanilla.
Bake in moderate oven for 20 minutes.
Spread layer of jam on top then cover with meringue. Sprinkle with coconut and bake until golden brown.
