3lb Chuck Roast

2 Tbsp Vegetable oil
1 1/4 cup beef broth divided
4 Chipotle chili's in adobo
6 garlic cloves
1 1/2 Tbsp ground cumin
1 Tbsp dried oregano
1/4 tsp ground cloves
3 bay leaves
1/2 cup Fresh lime juice

Prepare the beef: Cut the beef into large cubes. In a large skillet over medium high heat add the vegetable oil. Dab meat with papertowels and season with salt and pepper sear the beef on each side. Transfer to your slow cooker. Place in even layer and place bay leaves in between meat ends.

Blend the seasonings: In a food processor add adobo chilis, beef broth, garlic, cumin, oregano, salt, pepper, cloves, and lime juice. Pulse until blended and pour on top of the meat.

Slow Cook: Cook on low for 8-9 hours or high for 6 hours. Shred the meat with two forks and turn on warm.
