8 Ounces Orzo Pasta
1 small package pine nuts (about 1/4 to 1/2 cup)
1 small can of sliced black olives
Large bag of Spinach, rinse and remove stems
1 package of dried tomatoes or 1 cup of cherry tomatoes sliced in half
1/2 cup red onion, finely chopped (optional)
1 pound chicken marinated in Garlic Expressions for a couple of hours

Directions:

Marinate chicken breast and cook on barbeque. Remove and let cool. Slice into thin strips.

Cook Orzo for about 9 minutes, rinse and set aside.

In large bowl, combine all ingredients except chicken breast. Top with chicken breast and cover until ready to serve. Toss with 2/3 container of garlic expressions. Can substitute garbanzo beans for chicken for vegetarian dish.
