⅔ c. all-purpose flour
¼ tsp. salt
⅛ tsp. baking soda
½ c. packed brown sugar
3 T. unsalted butter, melted
2 T. water
1 large egg yolk
1½ tsp. vanilla extract
¼ c. mini semisweet chocolate chips
1 quart ice cream, softened in refrigerator, 15-20 minutes

Preheat oven to 325º. Line a baking sheet with parchment paper and spray with cooking spray. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, whisk brown sugar, melted butter, water, egg yolk, and vanilla until smooth, about 30 seconds.

Add flour mixture to brown sugar mixture and stir until combined. Stir in chocolate chips. Dough will be very soft. Scoop 12 mounds of dough onto the baking sheet. Bake until cookies are puffed and golden brown, 12 to 14 minutes.

Let cookies cool completely on baking sheet, about 30 minutes. Place ice cream in refrigerator to soften, 15 to 20 minutes.

Fill 6 cookies with ice cream; scoops of ice cream should be 2"x2". Gently press the cookie tops on and twist to push the ice cream to the edges of the cookies. Place ice cream sandwiches on a plate and place in the freezer. Freeze sandwiches until firm, at least 8 hours.

Note: Sandwiches can be individually wrapped and frozen for up to two months.
