1 c. flour
3 T. fresh mint leaves, finely chopped
2 T. crystalized ginger, finely chopped
1 T. lemon zest, finely grated
1 T. baking soda
½ c. butter, room temperature
¼ c. sugar
¼ c. brown sugar
½ tsp. vanilla
1 egg yolk, room temperature
¼ c. coarse sugar for rolling

Directions:
Directions:
Preheat oven to 350º. In medium bowl, whisk flour, mint, ginger, lemon zest, and baking soda. Set aside.

In large bowl, use electric mixer to beat butter, sugars, vanilla, and egg yolk until fluffy, about 8 minutes. With mixer on low, add flour mixture to combine.

Roll rounded teaspoons of dough into balls and gently roll in course sugar to coat. Place 2 inches apart on two parchment lined baking sheets. Bake until edges are slightly brown, 14 minutes. Transfer to wire rack to cool.
