Parmesan Lattice Cups
4 cups shredded Parmesan cheese

Salad
1 lb. of thinly sliced prosciutto
4 cups mixed greens
2 stalks celery, chopped
1 cucumber, sliced and halved
8 dates, pitted and chopped
1 cup feta cheese
8 cherry tomatoes, sliced in half

Balsamic or Raspberry vinaigrette salad dressing

Parmesan Lattice Cups
Heat skillet over medium heat. Spread 1 cup of cheese evenly on bottom of skillet. Cheese will melt and turn slightly brown. Take off heat and carefully scrape the solid from the bottom of the pan, being careful not to tear disc. Form disc over bottom of a salad bowl and cool. Repeat with remaining 3 cups of cheese. Remove from bowl and fill with salad.

Fried Prosciutto
Fry prosciutto in a non-stick skillet until crispy. Cool on paper towel. Crumble into pieces.

Salad
Toss greens, celery, cucumber, dates and tomatoes. Assemble in Parmesan cups and top each with 1/4 cup feta cheese and fried prosciutto. Serve with balsamic or raspberry vinaigrette.
