2¼ Cups All-Purpose Flour
1 Tsp. Baking Soda
1 Tsp. Salt
1 Cup Shortening (regular or butter flavored)
¾ Cup Brown Sugar (packed)
¾ Cup Granulated Sugar
2 Eggs (room temperature)
1 Tbsp. Vanilla Extract
1 Cup White Chocolate Chips
1½ Cups Dried Cranberries

Preheat the oven to 375ºF. Put parchment paper on or lightly grease 2 cookie sheets. Set aside..

In a medium bowl, combine flour, baking soda and salt; mixing well. Set aside.

In a large mixing bowl, cream together shortening and sugars until smooth. Beat in the eggs and vanilla extract. Gradually add the flour mixture until combined. Stir in the chips and cranberries.

Drop by rounded tablespoons onto prepared cookie sheets. Bake 7-10 minutes until edges of cookies start to turn brown. Rotate cookie sheet ½ turn at the halfway point of baking.

Cool 5 minutes on baking sheet. Remove cookies to wire rack to cool completely. Store in an airtight container.


Variation:

Use ½ cup of butter (room temperature) and ½ cup of shortening; instead of 1 cup of shortening.
