½ Tsp. Baking Soda
¼ Tsp. Salt
½ Cup Unsalted Butter (1 Stick) (room temperature)
¾ Cup Brown Sugar (packed)
¼ Cup Granulated Sugar
1 Tsp. Vanilla Extract
1 Egg (room temperature)
1 Tbsp. Water (or brewed coffee, if you have it)
2 Tbsp. Special Dark or Regular Cocoa Powder
1 Box Instant Chocolate or Chocolate Fudge Pudding Mix (3.4 oz.) (not sugar free)
1½ Cups Valentine M&Ms

This recipe involves chilling of the dough, so plan accordingly.

Place parchment paper on or lightly grease 2 cookie sheets. Set aside.

In a medium bowl, stir together the flour, baking soda and salt. Set aside.

In a large bowl, cream the butter and both sugars thoroughly. Mix in vanilla, egg and water (or coffee). Add cocoa powder and pudding mix (dry); beat until smooth. Beat in the dry mixture until just combined. Stir in the M&Ms.

Scoop 2 tablespoon sized balls of dough and place on the prepared cookie sheet. You don’t have to space them out, because this is just for chilling. Cover with plastic wrap and chill the cookies for at least 1 hour.

Preheat oven to 350°F. Place the chilled dough balls 2” apart on the prepared baking sheet. Press each ball down slightly with the palm of your hand.

Bake for 8-14 minutes or until the dough has lost its glossy sheen. Be sure to rotate sheet ½ turn at the halfway point of baking.

Cool cookies on cookie sheet for 5 minutes before transferring them to a wire rack to cool completely. Store in airtight container or freeze for up to 3 months.


Variation:

Use other color M&Ms for the different holidays.
