2¼ Cup All-Purpose Flour
1 Tsp. Baking Soda
¾ Cup Butter (1½ Sticks) (room temperature)
1 Cup Granulated Sugar
1 Granny Smith Apple (cored, peeled & diced in small pieces)
1 Pkg. Instant Cheesecake or Vanilla Pudding Mix (3.4 oz.)
2 Eggs (room temperature)
1 Tsp. Vanilla Extract
¾ Cup Toffee Bits

Preheat oven to 350ºF. Put parchment paper on or lightly grease 2 cookie sheets. Set side.

In a medium bowl, combine flour and baking soda. Set aside.

In a large bowl, cream together butter and sugar. Add the pudding mix and beat until well blended. Add eggs and vanilla extract; mixing well. Slowly add the flour mixture until just combined. Stir in apple and toffee bits.

Drop rounded tbsps. onto prepared sheet. Bake 8-10 minutes; rotating sheet ½ turn at halfway point of baking. Cool on sheet for 5 minutes. Transfer to wire rack to cool completely. Store in airtight container.
