1¾ Cups All-Purpose Flour
¼ Tsp. Baking Soda
¾ Tsp. Salt
¾ Cup Creamy Peanut Butter
1¼ Cups Brown Sugar (packed)
½ Cup Shortening
3 Tbsp. Milk
1 Tbsp. Vanilla Extract
1 Egg (room temperature)

Preheat oven to 375ºF. Put parchment paper on or grease 2 cookie sheets. Set aside.

In a medium bowl, combine flour, baking soda and salt. Set aside.

In a large bowl, beat together peanut butter, sugar, shortening, milk and vanilla. Mix in egg. Beat in dry ingredients until just combined.

Drop 1 inch size balls of dough onto prepared sheet. Flatten slightly in crisscross pattern with fork (dip in flour if needed).

Bake for 7-9 minutes (rotate sheet ½ turn at halfway point in baking) or until starting to brown. Cool 4 minutes in pan. Transfer to cooling rack to cool completely. Store in airtight container.
