500g prawns
1 c overripe tomatoes, finely chopped
1 onion, finely chopped
1 chili pepper *optional
2 cl of garlic minced
¼ c ouzo or wine
1 tsp oregano
½ c feta cheese, crumbled
5 tbsp olive oil
salt and pepper to taste
pinch sweet paprika
2 scallions to garnish

Directions:
Directions:
1. Peel shrimp, leaving on tails.
2. Dice the fresh tomatoes in small cubes and let them strain out water.
3. Sauté onion in olive oil for two minutes. Add shrimp, chopped garlic and chili peppers cooking one-two minutes more.
4. Deglaze with alcohol.
5. Add the chopped tomatoes, sugar salt pepper and paprika. cover with the lid, bring to the boil and let simmer - 5 minutes, until the sauce thickens a little bit.
6. Top with feta, cover and cook for 2 more minutes, until the feta slightly melts.
7. Garnish with sliced scallions and serve warm. Serve with bread for dipping.
