2 Cups All-Purpose Flour
½ Cup Powdered Sugar
1 Cup Butter (2 Sticks) (cubed)
¼ Tsp. Salt

Filling:

4 Eggs (room temperature)
2 Cups Granulated Sugar
7 Tbsp. Fresh Lemon Juice (2-3 lemons)
4 Tbsp. + 1 Tsp. All-Purpose Flour
½ Tsp. Baking Powder (sifted)

Preheat the oven to 350ºF. Grease a 9x13 inch baking pan. Set aside.

In a large bowl, mix flour and sugar. Cut in butter until mixture forms pea size pieces.

Pour and press evenly into prepared pan. Bake for 20 minutes. Rotate pan ½ turn at halfway point of baking. Cool completely.

In a large bowl, beat eggs slightly. Add sugar and lemon juice and mix. Fold in flour and baking powder until just combined.

Pour over cooled crust and bake for 25 minutes until golden around the edges. Rotate pan ½ turn at halfway point of baking.

Remove from oven and place pan on wire rack. After 5-8 minutes, sprinkle with powdered sugar. You can dust with more powdered sugar later; if desired.

Cut into bars when completely cooled. Store in airtight container in refrigerator.
