¾ Cup Cocoa Powder (sifted)
1 Tsp. Baking Soda
½ Tsp. Salt
1¼ Cups Butter (2½ Sticks) (room temperature)
2 Cups Granulated Sugar (divided)
2 Eggs (room temperature)
2 Tsp. Vanilla Extract

This recipe involves chilling the dough; so plan accordingly.

Put parchment paper on 2 baking sheets. Set aside.

In a medium bowl, combine flour, cocoa, baking soda and salt.

In a large bowl, beat butter, sugar and eggs until light and fluffy (about 2 minutes). Mix in vanilla. Gradually beat dry mixture until just combined. Cover bowl with plastic wrap and chill for 1 hour.

Preheat oven to 350ºF. Scoop dough into 1 inch balls. Bake about 8 minutes (rotate sheet ½ turn at halfway point of baking) until lightly browned on edges. Cool 5 minutes on sheet. Transfer to wire rack to cool completely. Store in airtight container.
