Cookie Dough:

1¾ Cups All-Purpose Flour (sifted)
½ Tsp. Baking Soda
½ Tsp. Salt
½ Cup Unsweetened Cocoa Powder (sifted)
¼ Cup Shortening
¼ Cup Butter (½ Stick) (room temperature)
1 Cup Granulated Sugar
1 Egg (room temperature)
¾ Cup Buttermilk*
1 Tsp. Vanilla Extract
1 Cup Walnuts (chopped) (optional)

Brown Butter Icing:

¼ Cup Butter (½ Stick) (room temperature)
2 Cups Powdered Sugar
1 Tsp. Vanilla Extract
2 Tbsp. Heavy Whipping Cream

This recipe involves chilling the dough, so plan accordingly.

In a medium bowl, mix flour, baking soda, salt and cocoa powder. Set aside.

In a large bowl, beat together well the shortening, butter, sugar and egg. Mix in buttermilk and vanilla. Now add the dry mixture to this wet mixture and beat well. Stir in nuts (optional) and chill for at least 1 hour.

Preheat the oven to 400ºF. Put parchment paper on or grease 2 cookie sheets. Drop rounded teaspoons of dough (2 inches apart). Bake 8-10 minutes or until starting to brown. Rotate sheet ½ turn at halfway point of baking.

Cool 4 minutes on sheet, then transfer cookies to wire rack to cool completely.

To make icing, in a medium saucepan, melt butter over low heat. Cook until golden brown. Remove from heat.

Blend in powdered sugar. Stir in vanilla and whipping cream until smooth. The icing will thicken as it cools. Spread the icing on the cookies. Store in airtight container.


*Buttermilk can be made by stirring in milk with 1 Tbsp. of vinegar. Be sure to keep total amount at ¾ Cup.
