2 Cups All-Purpose Flour
1 Box Instant Vanilla Pudding Mix (3.4 oz.)
1 Tsp. Baking Soda
1 Tsp. Ground Cinnamon
¼ Tsp. Salt
1 Pinch of Ground Nutmeg
¾ Cup Butter (1½ Sticks) (room temperature)
¾ Cup Brown Sugar
¼ Cup Granulated Sugar
1 Tsp. Vanilla Extract
1 Egg (room temperature)
1 Cup Apples (1 large Granny Smith Apple - cored, peeled and diced small)
1 Cup White Chocolate Chips

Cinnamon Sugar:
⅓ Cup Granulated Sugar
1 Tsp. Ground Cinnamon

Preheat oven to 350ºF. Line baking sheets with parchment paper. Set aside.

In a medium bowl, beat together the flour, pudding mix, baking soda, cinnamon, salt and nutmeg; mixing well. Set aside.

In a large bowl, cream together the butter, brown sugar and granulated sugar. Mix in the vanilla extract and egg until smooth. Add dry mixture to these wet ingredients and mix until well combined. Stir in apples and white chips.

For the cinnamon sugar, in a small bowl, combine the sugar and cinnamon; mixing well.

Make 1 inch balls of the dough and roll generously in the cinnamon sugar mix. Place on the prepared baking sheet.

Bake for 10-12 minutes; rotating pan ½ turn at the halfway point of baking. Allow the cookies to cool 5 minutes before removing to wire rack to cool completely (they will continue to bake as they cool). Store in airtight container.


Alternatives:

Substitute Cheesecake Instant Pudding Mix instead of Vanilla Mix.
Taking the White Chocolate Chips out of the recipe.
