3 Cups All-Purpose Flour
1 Tsp. Baking Powder
1 Tsp. Salt
1½ Cups Granulated Sugar
1 Cup Butter (2 Sticks) (room temperature)
2 Eggs (room temperature)
2 Tsp. Vanilla Extract
2 Cans Cherry Pie Filling (21 oz. each)

Glaze:

1 Cup Powdered Sugar
1 Tsp. Milk
½ Tsp. Almond Extract

Preheat oven to 375ºF. Line a 9x13 inch baking pan with a parchment paper "sling" (hanging over the edges of the dish) will make getting bars out of pan easier.

In a medium bowl mix the flour, baking powder and salt. Set aside.

In a large bowl, beat sugar and butter together until creamy and smooth (about 2 minutes). Add eggs and vanilla; scraping down the bottom and sides of the bowl and mixing well.

Add the flour mixture to the wet mixture; stirring to make a soft dough.

Press ⅔ of the dough evenly into the prepared pan. Then bake for 10-12 minutes. Rotate pan ½ turn at the halfway point of baking.

Add the cherry pie filling to the partially baked bottom crust, spreading into an even layer. Drop remaining dough onto the cherry filling in spoonfuls. You want some of the cherry filling to peek through.

Bake for 35-45 minutes until golden brown and the center is set. Be sure to rotate pan ½ turn halfway through the baking period.

Remove from oven and put it on a wire rack to cool 15-20 minutes.

While the bars are cooling, make the glaze in a medium bowl by whisking all the ingredients together until smooth. Drizzle over the warm bars, then cut into square pieces when completely cooled. Store in an airtight container.


Alternative: Use different flavored pie fillings; like apple, blueberry, strawberry, etc.
