1 Cup Butter (2 Sticks) (room temperature)
2 Cups Brown Sugar (packed)
2 Eggs (room temperature)
1 Tsp. Vanilla Extract
3 Cups Oats (old fashioned)
2½ Cups All-Purpose Flour
1 Tsp. Baking Soda

Fudge Layer:

2½ Cups Semi-Sweet Chocolate Chips
1 Can Sweetened Condensed Milk (14 oz.)
2 Tbsp. Butter
1 Tsp. Vanilla Extract
½ tsp. Salt

Directions:
Preheat oven to 350ºF. Line a 9x13 inch baking pan with a parchment paper "sling" (hanging over the edges of the dish) will make getting bars out of pan easier. Set aside.

In a large bowl, beat butter and sugar until light and creamy. Add eggs and vanilla; mixing well to combine. Add oats, flour, baking soda and salt. Stir just until combined. Set aside.

For making the fudge, in a medium saucepan combine the chocolate chips, condensed milk and butter. Cook over medium heat, stirring constantly, until melted and smooth. Remove from stove and stir in the vanilla and salt.

Use your hands to press about ⅔ of the cookie mixture into the bottom of the prepared baking dish. Then pour and spread the melted chocolate mixture evenly over the top of this.

Crumble chunks of the remaining cookie mixture over the top of the fudge layer; leaving spaces where the chocolate can peek through.

Bake for 25-28 minutes; just until beginning to brown on top (don't overbake or the bars won't stay as soft). Be sure to rotate pan ½ turn at the halfway point of baking.

Remove from the oven and place on a wire rack to cool completely.(at least 3 hours). Afterwards, it can be cut into serving pieces. Store in an airtight container.
