2 lbs boneless pork loin

Marinade:
1/2 cup soy sauce
1/4 cup dark beer
2 Tbsp molasses
2 tsp lemon zest
2 tsp orange zest
1 Tbsp fresh thyme, chopped fine
2 Tbsp grated ginger
2 garlic cloves, chopped fine
2 Tbsp brown sugar
1/2 tsp cracked black pepper
1 Tbsp kosher salt
1/2 tsp cayenne pepper

Whipped Sweet Potatoes:
4 sweet potatoes, cubed
1 Granny Smith apple, peeled and diced
1/2 cup heavy whipping cream
1/4 cup butter
2 tsp brown sugar
1 Tbsp maple syrup
1 tsp kosher salt
1/2 tsp black pepper

Directions:
Directions:
Combine the marinade ingredients.
Place the pork loin in a baking dish, cover with the marinade, and refrigerate for 24 hours.
Roast the pork loin, covered, for 1 hour at 400º.
Boil the sweet potatoes until tender.
Combine the apple, cream, butter, sugar, and maple syrup in a saucepan and bring to a simmer.
Whip the sweet potatoes, then gradually add the apple mixture and whip until smooth.
Salt and pepper to taste.
Let the pork loin stand for a few minutes before slicing and serve with the whipped sweet potatoes.
