2 Tbsp. butter
2 Tbsp. olive oil
˝ onion, finely chopped
2 garlic cloves, minced
1 c. arborio rice
3 c. chicken stock
˝ - 1 c. grated Fontina cheese
4 oz. soft herb and garlic goat cheese

Directions:
Directions:
Heat chicken stock to simmering. Sauté onion in butter and oil until soft. Add garlic and sauté 30 seconds. Add rice and mix well with butter and oil. Add ˝ c. chicken stock at a time, waiting until absorbed to add next ˝ c. of stock. It will take about 20 minutes to absorb all the liquid and for rice to get tender. Remove from heat and stir in Fontina and goat cheese.
