1 cup sugar
1/2 cup shortening
3 large ripe bananas
2 eggs
2 cups flour
1/2 teaspoon soda
1 teaspoon baking powder
1 teaspoon vanilla
1/2 cup nuts

Directions:
Directions:
1. Cream together sugar and shortening
2. Mash and whip bananas with blender
3. Add well-beaten eggs to the creamed mixture
4. Sift together flour, soda, baking powder
5. Add in vanilla and nuts
6. Bake at 350 for 1 hour

Adjust baking time for smaller loaf.
Double recipe makes 3 nice size loafs - bake about 45 minutes. Move oven rack to top position.
