2 cups AP flour
1 ½ cups sugar
⅓ cup sour cream
Generous 1 cup over ripe bananas (2-3)
2 large eggs
½ cup neutral oil
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp vanilla
½ cup coarsely chopped walnuts or pecans
½ cup chocolate or peanut butter chips (optional)

Directions:
Directions:
Preheat oven to 350º
Grease and flour a loaf pan or muffin tins (or line with cupcake paper).
Sift together flour, salt, baking powder and baking soda.
Blend oil and eggs; add sugar and blend well.
Mix in bananas, sour cream and vanilla.
Add dry ingredients to wet ingredients and mix until absorbed.
Stir in nuts and/or chips if using.
Pour into prepared loaf pan and bake for 45 min to 1 hour, until it passes the toothpick test.
Cool on wire rack completely, before removing from pan.
